The radios you mention are all old basically pre-internet. Fixed hundreds when they where in there prime and so easy to work on. Not worth buying old kit to test as it will be well out before you start.

It's great that you are trying to keep your mind occupied, especially with current situations and as you mention that you are disabled. I know how that feels, I am disabled myself and so is Alan who tried to give you pointers.
It does however feel that you are blindly scrabbling for answers to your questions.
What course have you enquired about at your local college? As far as I am aware there is no such thing as a "CB repair" course, hence my question, and becoming an electronics engineer takes many years of study as well as hands on experience if you wish to successfully repair something.
You ask for schematic/circuit diagrams saying that you cannot find them on a 'google' search and yet the internet is full of such information. Scribd, Pinterest, ManualsLib, CB Tricks are just examples of the plethora of sites that hold such examples and not hard to find at all. As Alan mentioned, most of the radios you refer to are indeed 'pre-internet' and as such there may be no schematics available. Some radios had no schematics in the first place often being rebranded copies of other radios at the time.
From your question about "tuning cams"(?) and basic "test equipment" requirements it does sound like you are trying to find a shortcut method to CB radio repair - we used to lovingly refer to this method back in the day as the "Golden Screwdriver". However, there is a lot more involved in VCO, IF, PA and general radio alignment than simply 'twiddling' anything that can be 'twiddled' I can assure you.
As you mention, some of these old CB radios seem to have gone up in value recently. I think mostly because of the rise in CB interest in recent years as well as the current situation and people 'over-bidding' for them on places like eBay. It then follows the typical trend of people placing such items at over inflated prices on such sites thinking they've struck the proverbial goldmine....
It's one thing to bid like mad for an old 'Stalker IX FDX' but quite another when someone is asking upwards of £100 for an old 'Uniden' UK FM rig(!)
Of course there will be the individual that wants the 'old rig' that their Dad used to have, or older brother or the first CB they had 'back in the day'. They will of course due to rose tinted memories pay more for such items, it's value being more personal to them. It doesn't mean it's worth that much to everyone else though.
You could fill that 'niche' of twiddling a radio to the satisfaction of an unknowledgeable punter, many have before and perhaps you'll make a small success of it. Who knows?
But if you have all the test equipment required, (expensive), the knowledge and expertise, (takes time), to track down a C-E leaking transistor, aged crystal, out of spec VCO capacitor or other such.......you'll soon see why the "go to guys" won't bother. Especially as almost 40 year old radios have probably had the "golden screwdriver" treatment before or semiconductors/parts that have been obsolete for decades.
But you go for it...... you'll soon find out that people aren't "starting to become lazy and high tech" at all.
You'll also find the 'value' aspect falls when you've spent days trying to find a fault you aren't able to fix.

All of the above, although sounding like a lecture, is actually a cautionary tale for the uninitiated. It is given as an attempt at helping an individual and perhaps others reading this also. I'm all for aspirations and dreams especially if they are achievable through hard work, determination and sheer tenacity. If you fall at the first hurdle and resort to derogatory statements or defensive remarks then you have surely failed before you have started.
